Lavinia’s Apple Lemon Custard Pie

Pie shell (8 or 9 in.) made from your own pastry recipe

4-6 large apples(enough to fill shell), preferably Baldwin or Northern Spy. Peel and slice and cook apples in water until almost fully cooked, being careful that they stay in slices and not mush. Drain off almost all liquid and place slices in shell. Sprinkle with ½ cup sugar.

In separate bowl, cream together ½ cup butter, ½ cup sugar, 1 egg yolk, 2 whole eggs, 1 teaspoon grated lemon rind, juice from half a lemon, and 1 teaspoon nutmeg.

Spread mixture over apples. Don’t worry if mixture looks curdled-it’s supposed to look that way!

Bake at 350 degrees for 45 minutes or until done. Can burn easily so keep an eye on it.
